2014 REX HILL Grande Cuvee Sparkling

Smoked salmon canapes
- 6 oz. good quality smoked salmon
- 1/2 cup softened cream cheese
- 1/2 cup softened chevre
- 2 tbs minced chives
- 1 tablespoon grated lemon zest
- salt and pepper to taste
- 16 dill sprigs
- 16 slices toasted baguette
Mix together the cream cheese, chevre, chives, lemon zest, and salt and peper. Spread each slice of toasted baguette witha tablespoon of cheese mixture, then top with smoked salmon and dill.
The 2014 REX HILL Grande Cuvée Brut Sparkling leads with notes of pear, apple, quince paste and rose petals, followed by just a hint of toasty brioche. On the palate, the floral hints continue, with a lovely lemon rind, almost saline finish. The mousse is rich, with tiny vibrant bubbles and a creaminess that shows its fine pedigree. Elegant and refined, this is a stunning sparkling.
